Marty is finally home for good. He was gone for 8 weeks total, with a few days back home between stops in Birmingham and Nashville. The last eight weeks have been all training so today is his first day at his new job locally. We are celebrating with homemade (using Udi's gluten free pizza crusts - which by the way are freaking awesome, low points AND available at the Winn Dixie just down the street.) Ok, really we are having pizza because it is quick and easy and after all freaking day shopping - the day before Thanksgiving, thank you - I figured the last thing I would want to do is cook dinner.
Speaking of cooking and Thanksgiving - tomorrow we are headed to a friend's house for the festivities. She has gone out of her way to make this Thanksgiving completely gluten free. Homemade gf stuffing, homemade crustless pumpkin pie, plenty of fresh vegetables, etc. Is that not the coolest thing ever? I have said it before and I will say it again - no matter where I live, I have the coolest friends. Must be me. :-D
I am taking the two unhealthy foods and a salad. Root vegetable gratin (by the way, root vegetables blanching is one of the yuckiest smells ever but the smell of the gratin cooking more than makes up for it) and sweet potato casserole with pecan topping.
Of course when Marty was unemployed we cut way back on our spending. Still plenty of fresh fruits and vegetables, but less meat and a lot more gluten free grains. That has led me to the realization that I am sensitive to a lot of them and am headed to the Doctor to do a supervised allergy detox diet. Basically, you eliminate everything that you think is causing problems for two weeks and then slowly add things back in to see which one(s) cause a reaction. The other unfortunately to eating all of the grains is that I gained weight. Since I can't for the life of me find my Weight Watchers weigh in book I am not sure how much total but I am pretty sure it is close to 20lbs. The good news is that my mom bought the 17 day diet book and she is going to follow it with me. We were planning to start as soon as she got the book but she decided to wait until after Thanksgiving. Not a problem for me because I have already eliminated most of the grains that hate me.
So that's about it as far as updates go. Hopefully it won't take me two months to update again.
